Lemon Doodles
4 tsp. lemon zest
2 Tbs. fresh lemon juice
1 cup raw walnuts
1/2 cup raw sesame seeds
2 Tbs. raw honey or agave
pinch sea salt
1/3 cup unsweetened coconut, finely shredded
Put first 6 ingredients in food processor and blend
10 seconds. Scrape sides and blend again 15 seconds.
Repeat until you have a moist, seedy dough.
Pinch off pieces and roll into 1 inch balls, toss in coconut
to cover. Refrigerate in a sealed container.
